Mardi Gras – Time for a Muffaletta Recipe!

The muffuletta is the quintessential New Orleans sandwich of cured meats, cheese and tangy olive salad piled onto a sturdy Italian loaf.

Muffaletta Sandwich Recipe
1 large round Italian loaf (sourdough works)
1/2 lb thinly sliced mortadella
1/2 lb thinly sliced Genoa salami
1/2 lb thinly sliced ham
1/2 lb provalone cheese, sliced
1/2 lb mozzarella cheese, sliced

Shrimp, tomato, and spinach pasta in garlic butter sauce

Shrimp, fresh tomato, and spinach with fettuccine pasta in garlic butter sauce – a delicious Italian pasta dish and a great way to use up a bunch of fresh tomatoes you might have sitting around in your kitchen.

Ingredients

1 pound fresh shrimp, uncooked, shelled and deveined
5 medium tomatoes, fresh, chopped into large cubes
1 cup cooked spinach
5 garlic cloves, minced

Beer-Candied Bacon

It’s a quick and easy appetizer that’s so fun and different – a great start to the new year

1 lb thick-cut, high quality bacon
1/2 cup brown sugar
1/4 cup + 2 tbsp beer 

Preheat oven to 400 degrees. Combine brown sugar and beer in a small bowl, whisking well to form a thin syrup. Set aside.

Authentic Fish Tacos w/Lime Herb Mayo

Crispy, flaky and tender fish topped with tangy slaw, tomatillo salsa, spicy pico de gallo, cool and creamy herb lime mayo and of course guacamole!

Ingredients
    • For the fish:
    • 8 ounces Flaky fish like tilapia, mahi mahi
    • 1 cup flour
    • 1 teaspoon baking powder

2 strips thick bacon
3 large sweet potatoes, cut into quarters
1/4 cup olive oil
Salt and pepper
1/2 cup sour cream
4 ounces cheddar cheese, grated

1 box white cake mix
1 tsp. nutmeg
3 eggs
1/3 C. oil

1/2 C. plain yogurt or sour cream
1 tsp, vanilla extract
