Tomato, cucumber, avocado salad

This is a quick and easy salad to put together that uses just a couple of summer ingredients. Juicy cherry tomatoes, cool, crunchy cucumber and creamy avocado.

Add some salty feta, red onion and a little minced parsley as well. Toss with a simple red wine vinaigrette and the salad is ready in under 15 minutes

Shortbread Crust:

• 2½ Cups All-Purpose Flour
• ⅔ Cup Sugar
• ¼ Teaspoon Salt
• 2½ Sticks Unsalted Butter (18 Tablespoons), very cold and cut into small cubes

Roasted Red Pepper Hummus

This red pepper hummus is over the top delicious! It is full of that irresistible freshly roasted red bell pepper flavor and you’re going to have a hard time putting it away.

1 1/2 medium red bell peppers
1 (15 oz) can chick peas, drained and rinsed
3 Tbsp fresh lemon juice
3 Tbsp tahini
2 cloves garlic (use fairly small ones)

Bacon Avocado Deviled Eggs

This is a simple recipe yet it's always a crowd pleaser!  It's a great dish to bring to a potluck because chances are even if someone else brings deviled eggs they won't be avocado bacon style.

6 hard boiled eggs  - will yield one dozen deviled eggs
2 small ripe avocados
the juice of half a lime
1/4 tsp. garlic powder
sea salt to taste
